Three stacks of bacon, sausage, elk meat, onions and cheese between tortillas all topped with sour cream, two fried eggs and scallions.

Bacon Scallion Mushroom Poppers

Ingredients:
18-20 cremini mushrooms
8 slices of bacon, finely chopped (reserve bacon fat after cooking)
2 tsp butter
3 scallions, minced
½ red bell pepper, minced
1 garlic clove, minced
1 cup sour cream
¼ tsp Worcestershire sauce
salt and pepper to taste
Directions:
Preheat oven to 350º
Wipe mushrooms w/ a damp cloth, remove stems and chop them finely
Cook bacon in a skillet until browned and drain on paper towels. Leave about a tablespoon of bacon grease in pan, add butter and let melt
Add the chopped mushroom stems, scallions, bell pepper, and garlic, stir until softened (roughly 5 minutes) transfer to mixing bowl and add remaining ingredients (sour cream, Worcestershire, salt, pepper) and mix
Stuff the mushrooms with the mixture and bake until browned, roughly 20 minutes
