Shiitake Mushroom and Provolone Cheese Stuffed Chicken wrapped in Bacon
Hey I’m Alx, this is my first post to FFFFOOD! This is really tasty and very fast an easy dish to make, total time from ingediants to plate, around 45 min.
For this you’re gonna need:
1 piece of Provolone (6-oz)6 oz fresh shiitake mushrooms, stems discarded (dried works too, see below)1/4 cup chopped shallot (1 large)1/2 teaspoon dried thyme, crumbled1 and 1/4 teaspoons salt1/2 teaspoon black pepper3-4 tablespoons unsalted butter4 chicken breast halves (prefferably with skin and bones) 2 and 1/2 to 3lbs total
put oven rack in the middle and preheat to 500F (270C). line baking pan with tin foil
coarsely grate cheese and set aside in a large bowl. pulse mushrooms with shallot in food processor with thyme , 3/4 tsp salt and 1/4 tsp pepper until finely chopped (don’t puree). (NOTE dried mushroom can work too, put mushrooms in a bowl with a bit of chicken stock cube and pour boiling water and stir. let set for 5-6 minutes)
heat 2 tablespoons butter in 10in skillet over moderately high heat until foam subsides, then saute mushroom mix, stirring occasionally, until lightly browned, about 5-6 minutes. throw in 1 more tablespoon of butter half way through, or substitute with a dash of olive oil.
when mushroom mix is done, stir into cheese (some cheese will melt).
pat chicken dry, then cut 3in long pockets horizontally in long curved side of each chicken breast half and fill each pocket with 1/4 of cheese/mushroom mix (some filling will be visible)
wrap each piece of chicken tightly with 3-5 pieces of regular bacon or thinly sliced pancetta, depending on size and preference
put chicken in baking pan, then melt remaining tbls of butter and brush over chicken. sprinkle over remaining salt and pepper. roast until cooked through and cheese is melted and oozing, 20-25 minutes
Serve with whatever you like, I chose basmati rice and steamed broccoli, fruity white wine to compliment cheese and mushrooms.
