Grilled Double Cheese and Bacon Sandwiches
Recipe by Pillsbury:
INGREDIENTS:
- 8 slices bacon
- 4 (1/4-inch-thick) slices red onion
- 4 (3/4-oz.) slices Cheddar cheese
- 4 (3/4-oz.) slices mozzarella cheese
- 8 (1/2-inch-thick) slices sourdough or Vienna bread
DIRECTIONS:
- Heat closed contact grill for 5 minutes.
- When grill is heated, place bacon on bottom grill surface. (If necessary, cook 4 slices at a time.) Close grill; cook 3 to 4 minutes or until browned. Remove bacon from grill; drain on paper towels. Cut bacon slices in half crosswise.
- With rubber scraper, carefully scrape most of drippings from grill into drip tray. Add onion to grill. Close grill; cook 4 to 6 minutes or until tender.
- To make sandwiches, layer Cheddar cheese, cooked bacon, onion and mozzarella cheese between bread slices. Place 2 sandwiches on bottom grill surface. Close grill; cook 3 to 5 minutes or until bread is toasted and cheese is melted. Repeat with remaining sandwiches.

Carl’s Jr sent us a coupon for their new Grilled Cheese Bacon Burger.
It was apparently first invented by Carl’s Jr as a vegetarian option for their menu, but some executive said, “Why not add a beef patty and bacon”? Brilliant.
Review:
It was very good, but it was actually not the bacon that put it over the top; it was the cheese! There is quite a bit of cheese on this beauty. Total calories? 990. Oh yeah, it was delicious. The burger patty was a bit too well-done, but the bacon and cheese more than made up for it. Will definitely buy again.

Not quite as pretty as the promotional photo above, but still tasty.
Carl’s Jr actually has quite a few bacon options on their menu, so they’d make a worthy destination the next time your bacon-cravings hit.

Grilled Cheddar Bacon and Tomato Sandwiches
- 8 thick-cut bacon slices
- 8 slices country-style sourdough bread or batard (cut on deep diagonal into 5x3x1/2-inch slices)
- 2 cups (packed) grated extra-sharp cheddar cheese (about 8 ounces)
- 8 tomato slices, seeds removed, slices drained on paper towels
- 4 tablespoons mayonnaise
Preparation:
Cook bacon in heavy large skillet over medium heat until brown and crisp, turning occasionally, about 6 minutes. Transfer bacon to paper towels and drain. Wash and dry skillet.
Place 4 bread slices on work surface. Press 1/4 cup grated cheese onto each slice. Top each with 2 tomato slices. Sprinkle with pepper. Place 2 bacon slices atop each, breaking into pieces if necessary to fit. Press 1/4 cup grated cheese over bacon on each. Top sandwiches with remaining bread slices, then spread 1/2 tablespoon mayonnaise over top of each sandwich. Heat 2 heavy large skillets over medium heat. Add 2 sandwiches, mayonnaise side down, to each skillet. Place plate atop both sandwiches to weigh down. Cook sandwiches until bottom is golden brown, about 2 minutes. Spread top of each sandwich with 1/2 tablespoon mayonnaise. Turn sandwiches over, mayonnaise side down. Top with plates and cook until golden brown on bottom, about 2 minutes. Transfer sandwiches to work surface. Cut sandwiches crosswise in half and serve
