Potatoes and Garlic Scapes fried in Bacon Grease

1. Fry a package of bacon; set aside.
2. Thinly slice a pound of new potatoes and three garlic scapes.
3. Fry the scapes slightly in the hot bacon grease. Remove from pan.
4. Fry the potatoes, adding a little bit of butter (I know! But it’s necessary, flavor-wise) and salt and pepper.
5. Add the scapes back in, plus a tiny bit of finely chopped parsley.

Take some bacon, 3 or 4 pieces, and dice it.  Throw it in a pan on medium and start rendering out that fat.  Sometimes it helps if you stand over it and leer “C’mon, girl, gimme dat fat”.  When you get the fat out, throw some diced onion and minced shallot in there.  Let that stuff get all tasty.  Then, add some minced garlic, salt and pepper, and your favorite hot sauce (I prefer Khan’s Island Sauce, because it’s the best one, but whatever, use some inferior flavor, it’s your damn food).  Stir that mess up a bit, then dump in about 2 cups of cooked black-eyed peas.  Bring everything up to temp, then slap it in a bowl and go crazy on that shit.

Trust me.
