Bacon Cupcakes
made just like regular cupcakes, but with 1/3 cup of maple syrup added to the batter and crumbled bacon on each one.
Jess just emailed “please be socialist and post your maple bacon cupcake recipe.” How can I say no to a request like that?! Here it is, in all its glory.
cupcakes
what you need:
1½ C flour
1 ½ t baking powder
½ t ground cinnamon
¼ t salt
1 C sugar
½ C (1 stick) unsalted butter, melted and then cooled
2 eggs
1 t maple extract
½ C milk
what you do:
1. Preheat oven to 350 degrees and line baking pan with cupcake liners.
2. In a small bowl combine flour, baking powder, cinnamon and salt
3. In a large bowl, whisk together cooled butter, sugar and eggs until smooth
4. Whisk in maple extract and then alternate between whisking in flour mixture and milk
5. Spoon batter into prepared liners, filling them up halfway
6. Bake 20 minutes; cool completely before frosting
topping
what you need:
2 c. powdered sugar
1 tsp. vanilla
2 tbsp. butter, softened
3-4 tbsp. milk
1/2 tsp. maple flavoring
4 slices baconwhat you do:
1. Combine powdered sugar, vanilla, maple flavoring, butter and milk, beat with a hand mixer until desired consistency
2. Frost cupcakes
3. Cut bacon into thirds and pan fry until VERY crispy
4. Drain on paper towels and allow to cool before crumbling and scattering on top of cupcakes
