Holiday Bacon-Wrapped Parmesan Cracker Appetizers by thepioneerwoman.com
I decided to make my sister these amazing looking holiday bacon appetizers for her arrival in Philly on Monday! We are going to be so. fat.
Well done!
Bacon Wrappetizers:
Ingredients:
- 1 package Club Crackers
- 1 pound thin sliced bacon
- Grated Parmesan Cheese (optional alternative: brown sugar)
Directions:
- Lay crackers face up on a cookie sheet
- Cut package of bacon in half
- Scoop approximately 1 teaspoon on parmesan cheese onto each cracker
- Carefully, wrap each cheese covered cracker in one piece of bacon. Make sure the cheese doesn’t fall off, and the cracker is completely covered
- Place the bacon wrapped crackers onto a baking sheet with a rack in it
- Bake in 250-degree over for 2 hours
These were a MASSIVE hit with my family and are now expected at every gathering. I always make a LOT because everyone wolfs these down like they’ll never be fed again.
BLT Dip
Ingredients:
- 1 cup sour cream
- 1/2 cup mayonnaise
- 4 ounces cream cheese
- 1/2 cup shredded cheddar cheese
- 1/2 green bell pepper, diced
- 1/4 yellow onion, chopped
- 1 tomato, seeded and diced
- 1 pound bacon, cooked and crumbled
- 1/2 teaspoon garlic powder
- Black pepper to taste
- Crackers/bread cubed, for dipping
- Shredded Lettuce, for garnish
- In a medium bowl blend sour cream, mayonnaise, cream cheese, garlic powder and black pepper.
- Fold in shredded cheese, green pepper, onion, tomato and bacon.
- Garnish with more tomato, shredded cheese and lettuce.
This was good. Thicker than I expected it to be, but delicious non-the-less. I garnished with green onion rather than lettuce, simply because we had no lettuce.
by Bakon Vodka:
Shrimp-skewers:
- 1 lb peeled and deveined shrimp
- 2 large cucumbers
- 3 large avocados
Dipping sauce:
- ¼ c Bakon Vodka
- ½ c ketchup
- ¼ c fresh lemon juice
- 1 c thinly sliced scallions (about 6)
- 2 Tbsp horseradish (or to taste)
- 1 tsp Worcestershire sauce
- 1/8 tsp Cayenne Pepper (or 1 tsp Tabasco)
Preparation
- Poach shrimp in lightly salted water until cooked (about 3-5 minutes). Drain and chill.
- Dice cucumbers and avocados into small chunks (about ½ the size of the shrimp). Skewer shrimp, avocado, and cucumber pieces onto individual toothpicks.
- To make dipping sauce, mix all remaining ingredients in a large bowl. Add salt and pepper to taste.
- Serve skewers at room temperature on a garnished plate. Place sauce in bowl over ice. Makes about 50 appetizers.
I can’t believe this recipe doesn’t contain any actual bacon. We recommend you add some bacon to your skewers.
