3 cups of plain flour 3 teaspoons baking powder 1 teaspoon salt 2 tablespoons sugar 3 eggs, separated 250ml of Guinness at room temperature 1 1/2 cups milk 1/3 cup melted butter Bacon grease (from cooking bacon)
All you need to do is sift the flour with the baking powder, salt and sugar. Beat the eggs yolks and stir in the beer, butter and milk then stir in the flour fixture. Beat the egg whites until peaks form then stir into your batter. Drop spoonsfulls into the hot bacon grease and turn when batter forms lots of holes. Serve with Guinness (side of Jameson’s optional).
